Chef Ian’s Tip

Use Smoked Garlic Salt instead of ordinary salt—not as well as it. Season both sides of your steak, include the edges of a thick cut and press the seasoning gently onto the surface so it stays with the meat during cooking.

The salt pieces have a rustic, hand-broken texture. If you want a finer, more even coating for steak or a dry rub, crush the larger pieces between your fingers or briefly in a mortar and pestle before using.

When adding it to marinades, sauces or gravy, season lightly at first and taste again before serving. It is much easier to add another pinch than to correct an over-salted dish.
