Black garlic may sound like one of those ingredients reserved for restaurant kitchens, but it is surprisingly easy to use. Think of it as a shortcut to deeper flavour—a spoonful can make gravy taste richer, give a pasta sauce more body or turn cheese and crackers into something altogether more interesting.

Cypress Ridge Caramelised Black Garlic is soft, sticky and spoonable, with a gentle garlic character and a deep sweet-savoury flavour. You do not need a special black garlic recipe. You simply need to know where to reach for it.

What Is Black Garlic?

Black garlic begins as ordinary garlic, but time and controlled warmth transform it. Over around 40 days, the sharp raw garlic bite softens, the colour deepens and the flavour becomes sweeter, richer and much more rounded.

Aaron’s first experiments at Cypress Ridge involved a small pie warmer, a couple of garlic bulbs and plenty of patience. The result was unlike fresh garlic: subtle rather than sharp, naturally sweet and packed with savoury depth.

That savoury depth is often called umami—the quality that makes a gravy, sauce or slow-cooked dish taste fuller and more complete.

Why it earns a spot in the Underground Chef pantry

Because it has two very useful jobs.

You can serve it exactly as it is with bread, cheese or an antipasto platter. You can also use it as a flavour enhancer when a gravy, jus, pasta sauce or braise tastes as though it needs something more.

Flavour Profile

Sweet, sticky and deeply savoury, with a mellow garlic character and notes reminiscent of balsamic, molasses and slow-caramelised onions.

It does not have the heat or sharpness of raw garlic. Instead, it adds richness and a rounded background flavour without making the entire dish taste strongly of garlic.

How to Use It

Sourdough, Cheese & Platters
  • Spread a little over toasted sourdough.
  • Pair it with soft or hard cheeses—Cypress Ridge particularly recommends double-cream brie.
  • Add it to a Ploughman’s lunch, cheese board or antipasto platter.
Gravy & Jus
  • Whisk a small spoonful into gravy or jus for sweetness, colour and savoury depth.
  • Add it to pan juices after cooking steak, lamb, pork or chicken.
Pasta, Risotto & Sauces
  • Stir it through mushroom pasta, risotto or a slow-cooked tomato sauce.
  • Blend a little into cream sauces or pan sauces when they need more depth.
  • Add it to a beef, lamb or mushroom braise.
Marinades & Glazes
  • Mix with balsamic vinegar, olive oil or a little honey to create a rich glaze.
  • Add it to marinades for beef, pork, lamb, chicken or roasted vegetables.
Butter, Mayo & Everyday Condiments
  • Blend it through softened butter for steak, mushrooms, bread or vegetables.
  • Stir a little into mayonnaise or aioli for burgers, sandwiches and hot chips.

Chef Ian’s Tip

Treat black garlic as a flavour enhancer rather than a direct replacement for fresh garlic. Start with one small spoonful, allow it to dissolve into the sauce or gravy, then taste before adding more.

Because it is naturally sweet, avoid frying it hard in a dry or very hot pan—it can catch. Stir it through after you have added liquid, or add it towards the end of cooking so you keep more of its subtle flavour.

Serving it with cheese? Allow the portion you plan to serve to come to room temperature. The flavour and soft, sticky texture will be much more noticeable.
