There is something irresistible about karaage: beautifully crisp and golden on the outside, while the food inside remains tender and full of flavour.
Spice Lab Japanese Karaage Flour makes that result much easier to achieve at home. The flour and seasonings are already combined, taking away the need to measure and balance several different ingredients whenever the craving strikes.
Use it straight from the packet as a dry coating, or mix it with water to create a seasoned batter. Although it is perfect for chicken karaage, it is just as useful for fish, other meats and vegetables - making it a versatile shortcut to keep ready in the pantry.
Made in Japan with no added MSG, this is the kind of shortcut Chef Ian appreciates: one that saves time, delivers consistency and still lets you decide exactly what goes on the plate.
Lightly coat chicken, meat, fish or vegetables with Karaage Flour before frying.
Mix equal quantities of Karaage Flour and cold water in a 1:1 ratio until smooth.
For example, combine 50 g of Karaage Flour with 50 mL of cold water. Coat your chosen ingredients and fry until crisp, golden and completely cooked through.
Keep the water and finished batter cold, and cook in small batches. Overloading the fryer or pan lowers the oil temperature and can produce a heavier, oilier coating instead of the crisp finish you are looking for.
