Zippy. Tangy. Unmistakably yellow — the mustard that brings back memories.

If you grew up with a bottle of yellow mustard living permanently in the fridge door, this may feel wonderfully familiar. It has that bright, tangy flavour made for cold-meat sandwiches, cheese toasties, sausages and backyard barbecues - but with Drunken Sailor’s own recipe and a little more attitude.

This American-style mustard combines vinegar and mustard with garlic, onion, turmeric, paprika and spices. It’s lively without being overpowering, easy to squeeze and ready to wake up anything that needs a sharp, savoury lift.

Why it earns a spot in the Underground Chef pantry

Because mustard is one of those simple ingredients that can completely change a dish. Use it straight from the bottle as a condiment, or make it work harder in dressings, marinades, glazes and sauces.

It has enough tang to cut through rich meats and melted cheese, but remains approachable enough for everyday sandwiches and family favourites.

Chef Ian’s best ways to use it
  • Hot dogs and sausages: add a generous zigzag with caramelised onions
  • Burgers: spread onto the bun or combine with mayonnaise for a quick burger sauce
  • Cold-meat sandwiches: particularly good with ham, corned beef or roast beef
  • Cheese toasties: spread a thin layer inside before toasting
  • Potato salad: stir through mayonnaise with herbs and a splash of vinegar
  • Salad dressings: whisk with olive oil, vinegar and a little honey
  • Glazed ham: combine with honey or brown sugar before brushing over the ham
  • Marinades: mix with oil, garlic and herbs for chicken or pork
  • Barbecue meats: serve alongside steak, sausages, pork or anything hot off the barbie
  • Devilled eggs: add a squeeze to the yolk mixture for extra tang
Chef’s tip

Mustard is a natural emulsifier, making it especially useful in salad dressings. Whisk it with vinegar first, then gradually add the oil—the mustard helps bring everything together and keeps the dressing from separating as quickly.
