

The lessons from Granny Parker and Okaasan stayed with me through every stage of my life. I commenced my professional journey as a chef at the age of 16, and over the years, my career has taken me through the food cultures of many nationalities. Each experience broadened my understanding of ingredients, techniques, and the stories that food can tell.
Turning 65 was a turning point. I realised that my priority should be health and balance, inspired by the longevity and mindful eating practices I observed in Japanese culture. It also reignited my desire to reconnect with my Japanese heritage, blending it with the European flavors I had grown up with. This became the foundation of my current approach: using artisan ingredients, celebrating authentic techniques, and creating food that nourishes both body and soul.
At the heart of it all, it’s about love. You cook with love, and it comes through in the meals you create. You cook from your soul, and nothing is more important to a cook than seeing someone enjoy the meal you made. So much of modern food has lost this essence—it lacks flavor, authenticity, and the care that transforms ingredients into an experience.
