Tonkatsu sauce is the classic Japanese finishing sauce for anything crumbed and crunchy — especially katsu. Think of tonkatsu as Japan’s answer to schnitzel… but coated in light, ultra-crispy Japanese breadcrumbs (Panko), and served with a sauce that’s sweet, savoury and tangy all at once.

Chef Ian’s take — why I keep it in my pantry

I love tools that do multiple jobs, and tonkatsu sauce is one of them. It’s not just a dip — it’s a finisher, a burger sauce base, a glaze, and a shortcut to “big flavour” when you’re cooking anything crispy.

Best ways to use (Chef Ian approved)
  • Real-deal Katsu: chicken or pork crumbed in ENSO Panko, fried or air-fried, then drizzle this over the top
  • Schnitzel upgrade: use it instead of gravy — it’s a game changer with a simple salad
  • Crumbed seafood: panko prawns, fish bites, calamari, crab cakes
  • Burger sauce: mix 1:1 with mayo (add chilli if you like) for a Japanese-style burger spread
  • Sticky wing glaze: brush on during the last few minutes of cooking for shine + punch
  • Dumplings & gyoza: use as a dip, or spike it with chilli oil and ginger
  • Katsu curry shortcut: drizzle into curry sauce for instant depth and sweetness (tiny amount, big impact)
