Kitchen 101: Eating for One – 7 Meals from One $10 Chicken Part 6: Japanese-Style Chicken Ramen Bowl (Clean, Fresh & Full of Flavour)

This is how you turn instant noodles into something properly good. Chef Ian skips the seasoning sachet and uses homemade chicken stock + a dash of sweet soy (kecap manis) to create a balanced, flavour-packed noodle bowl.

This is where we take things in a completely different direction.

Same chicken.
Same system.
πŸ‘‰ Totally different result.

Instead of using the seasoning sachet (full of things you don’t need), Chef Ian uses the homemade chicken stock from Part 4 to create a clean, flavour-packed Japanese-style noodle bowl.

Finished with a touch of sweet soy for depth, this is fast food… done properly.

Recipe
  • Dish: Japanese-Style Chicken Noodle Bowl
  • Serves: 1
  • Cost per serve: Under $5
  • Time: 10–15 minutes
Ingredients
  • ~100g cooked chicken breast
  • 1 portion noodles (instant noodles β€” discard seasoning sachet)
  • 1/2 litre homemade chicken stock
  • Bok choy (chopped)
  • Choy sum (chopped)
  • ~30ml sweet soy sauce (kecap manis or similar)

πŸ‘‰ To finish:

  • Bean sprouts
  • Spring onion (chopped)
  • Shichimi togarashi (optional)

πŸ‘‰ Optional heat:

  • Sriracha
  • Green Sambal
Method
Step 1: Heat the Stock
  • Pour chicken stock into saucepan
  • Bring to the boil
Step 2: Build the Base Flavour
  • Add sweet soy sauce (kecap manis)
  • Stir through

πŸ‘‰ This adds depth, slight sweetness, and rounds out the broth

Step 3: Cook the Noodles
  • Add noodles to the stock
  • Cook until just tender
Step 4: Prep While It Cooks
  • Chop bok choy and choy sum into bite-sized pieces
Step 5: Build the Bowl
  • Add greens to the pot
  • Add cooked chicken
  • Simmer briefly until heated through

πŸ‘‰ Keep greens vibrant β€” don’t overcook

Step 6: Finish & Serve
  • Pour into bowl
  • Top with:
    • Bean sprouts
    • Spring onion
    • Shichimi togarashi (optional)

πŸ‘‰ Add sriracha or sambal for extra heat

Chef’s Tips
  • Homemade stock = clean, natural flavour
  • Sweet soy adds balance and depth
  • Ditch the seasoning sachet β€” you don’t need it
  • Add greens at the end for colour and texture
  • This is fast food… done properly
Serving Notes

Light, fresh, and comforting β€” with just enough richness from the soy.

πŸ‘‰ A proper bowl of noodles, made your way

Skill Focus
  • Building flavour without packets
  • Balancing savoury + sweet
  • Using stock as a base
  • Quick, nutritious cooking
Final Thought from Chef Ian

β€œYou don’t need flavour packets…

You just need to understand flavour.”
